Praise the Ray

Oh! This beer makes us wish we could describe the aroma of fruit better! But, best bet is to smell it for yourself. The perfect glowing yellow haze hopped with generous amounts of Azacca, Mosaic, and Moutere results in a glass full of dry, juicy, tropical scrumptiousness! Give yourself to the Ray.

Hazy Pale Ale with Ginger & Galangal - 5.0% ABV

With a shared love of smash burgers you know it was only a matter of time before these pals of ours shared brew time with us, too! A collab pale made to enjoy with a kimchi smashie on a nice day - particularly a special day of Seattle Beer Week where you may find us mingling at their spot, ugly shoes and all! But clearly enjoyable on its own any day! Anyway, ultra-pale with a forward ginger nose and dry spritzy body, supported by Amarillo and Blanc hops and a spicy galangal finish; a perfect beer to welcome the coming of Summer!

We do love making beer with our bud, Jon and his crew! We also love making WC/Modern Pils! So, it was only natural we get together and make something for their Seattle Beer Week West Coast Pilsner Party! It’s pretty simple, pilsner malt, Vic Secret, Centennial, & Galaxy hops, clean lager fermentation, and a month of cold holding - and you got a modern pilsner in your glass!

Reunited… and it feels so good

Hazy IPA - 7.0% ABV

It really does feel good! We made this saturated juice bomb with our buds out of Aberdeen as a bit of a reunion beer. Loaded with Citra, Vic, Nelson, and a phat dry hop of
tangerine-heavy Chinook. The beer smells as good as it looks - as good as it tastes!

Villarreal
Mexi-’Merican Lager - 4.0% ABV

Pat’s been making a version of this beer for the last couple decades. It represents the beer his mama’s side of the family - the Villarreals, Salazars, and Marquezes - would drink at any and all family get-togethers, from reunions to wakes, graduations to house parties. Like food, beverage is usually the last part of a culture to assimilate and with this beer, we’re happy to keep holding out with ya all! Made with a cereal mash of a third maze grits, third Vienna malt, and a third pils, and hopped with enough Saaz to make it drink right, lime or no! AND.. we do like lime in the glass, not the can around here!

Traditional Pale Ale - 4.4% ABV

Back in rotation by popular demand! Utilizing LINC Baronesses English Pale malt. Bittered with Cascade and Elani hops, and dry hopped with Citra and additional Cascade. Makes for a snappy pine and citrus showcase!

Blow the Whistle
West Coast IPA - 6.8% ABV

It’s official, Blow the Whistle! Named for the original knitting mills steam-powered whistle atop our production building connected to our boiler, both of which we inherited in taking over part of the old Fish Tale facility - and therefore associated with more than 100-year tradition of blowing the whistle in Olympia. With this beer we celebrate our ability to bring back this tradition after its hiatus from Fish Tale shutting down their production a few years ago. We now proudly sound it at 5 ‘o’clock Monday through Friday to let our community know it’s beer time, no matter where they choose to partake! The beer: lightly hazy WC IPA with loads of Citra, Citra Cryo, and HBC 586 hops! Pale and soooo juicy!

Stacked on LINC Buzz Pils malt, flaked wheat, oats, and barley.
Hopped to perfection with Mosaic and HBC586, and double dry hopped with Galaxy, Moutere, and Citra - ridiculously juicy, but not sweet! Still tastes like a beer!

Pash the Tinnie
Fairly Clear Pale Ale - 5.4% ABV

This all Australian hopped pale is our ode to some of our favorite hops from down under! Topaz, Vic Secret, and Galaxy are paired with a light malt base and fermented with our house Yorkshire ale yeast strain for a beer bright in tropical fruits and citrus, with a touch of dank!

A beer made for our friend and damn near family member, Sam
fucking Jayne! Sam helped lay the path for the northwest’s other not-so-grunge 90’s indie music scene, showing the kids how to go out and do your thing and have fun doing it, through his raucous Love As Laughter! Though Sam is missed, he’s definitely not gone, and we made this beer to drink with him in some cross-eyed beautiful place.

Zealandia
Hazy NZ IPA - 5.9% ABV

If the PNW was its own continent it would maybe be something likened to that of New Zealand. It’s befitting we love all the hops this growing region has to offer. For this batch we selected Riwaka, Moutere & Waimea, but each new batch will feature its own special blend. Built with LINC Steffi Pils malt, flaked oats, flaked barley, and corn and fermented using English yeast. Featuring strong tones of loquat, lychee, and rock melon and so very fluffy!

Totten’s Best Bitter
English Bitter Style Ale - 4.2% ABV

Bitter in name only, this traditionally made English style pale ale is brewed with a generous amount of Simpsons Maris Otter as well as several Simpsons crystal malts and a touch of malted spelt. Hopped exclusively with Brewers Gold, open fermented with our favorite Yorkshire ale yeast and naturally conditioned to a soft carbonation.

ölsch Style - 6.2% ABV

Crafted for our dear friends at Hal’s in loving memory of the man who taught the crew how to sail, Clark McPherson. Kölsch was Clark’s go-to beer and we think he’d find this even keeled rendition to his liking. Well balanced and brewed with several antique malts from Weyermann Malting, hopped with traditional Halertau Tradition and finish-hopped
with Yakima Loral. Finally, fermented cool with a traditional Kölsch yeast from Cologne
Germany.

Mosaic
Soft IPA - 6.2% ABV

We loved our fresh kilned all-Mosaic IPA so much we decided to take another crack at it! This time using 100% Roy Farms t-90 Pellets, Mainstem Pale malts, and a bunch of flaked grains. Fermented with our favorite Yorkshire yeast strain and double dry hopped with more Mosaic!

Circus Lupulus
Cold IPA - 5.9% ABV

Based on our ill-fated Simcoe/Idaho 7 Fresh Hop last Fall, we took the hop concept and softened it up a bit by Citra-fying it! Made with LINC Steffi Pils and Buzz Pale malts, corn grits, and flaked oats. Fermented cool - not cold - then double dry hopped with Roy Farms Citra and held cold until packaging. This one was a real trick to pull together!.

Landbier Style Lager - 4.2% ABV

Our take on a traditional German style Landbier only a touch lighter in alcohol and color and a touch higher in drinkability! Made with single decocted Steffi Pils malt and hopped with Tettnanger and Calista hops, fermented cold and lagered colder, unfiltered but still crisp and crushable! We were stoked to brew this up with our Hop Pharm buds out in Gig Harbor and their hound friendly establishment!

Beer Hug
Brown Lager - 2.8% ABV

This beer started out a nod to German Style Dunkle; simple, LINC Baronesses Munich malt and a touch of dehusked roasted barley, with a smattering of hops. It has since gone off in its own direction! From the kettle to the fermenter to the finishing tank, it’s been nothing but fortuitous accidents. The result, an unrepeatable, rich, complex - but oh so crushable - brown beer that drinks like a brown beer should drink.

Fluid Diet
Modern Pale - 5.2% ABV

Perhaps you’re like us and have a 70% liquid diet and need to be drinking multiple beverages at any given time, or you’re one who just sticks to one thing for a while. Either way, here’s a timeless treat we think suits all occasions. LINC Buzz Pale and Elwah Spelt, with HBC 586, Enigma, and Mosaic hops. Fermented with English yeast. Punches way above its weight, drinks like an IPA.

Pils malt, some flaked oats and wheat. Hopped with Simcoe, Strata and Bravo, like, a crap ton! Double dry hopped even! Bitter, citrus, pine… but not too bitter… but bitter and not too piney… but fruity, but not too fruity… and sorta’ clear...

Infinite Loop
Modern Pilsner - 4.6% ABV

We’ve been brewing what used to be called “Hoppy Pils” in our former lives for the last 7 years. Only now, we have figured out a better way to say “Pilsner brewed with Calista and Tet on the hot side and dry hopped with a whole bunch of Riwaka!” There’s some malt and water and our special Rocky Mountain lager yeast too! And time... real cold time, for a real cool beer! Put this on repeat, call it infinite lupulin.

Pocket Pils
German Style Schankbier - 3.4% ABV

Malted with LINC Buzz Pils and spelt and hopped with German Tet and Hallertau. The first beer we’ve made on our brewhouse and cold fermented with a special Rocky Mountain lager yeast strain and conditioned until we decided to sell it! Sure to be a regular, crisp, crusher.
