ilk Pils
American Pilsner - 4.8% ABV

No, this ain’t no beer for the banquet, nor is it a beer for your high life! It’s an honest and true pilsner made with American grown malt and brewed with a touch of corn grits, Yakima valley Adeena hops and some rotating German hops. Crisp and clean, herbal and lightly fruity, bitter and well balanced.

ilk WC IPA
West Coast IPA- 6.6% ABV

Fitting somewhere between a Juicy IPA, a classic WCIPA and the new hazy WCIPA, our Ilk IPA fits nicely in the pocket of what we all are calling American IPA. Slightly hazy and firmly bitter, our IPA features Citra and Mosaic hops with a couple of rotating classic or modern IPA hops.

ilk Pale
Modern Pale Ale - 5.2% ABV

Made with a blend of pils and pale malts along with hit of flaked oats, our modern pale is a lightly hazy, straw colored beer hopped and dry hopped with a not so sensible amount of Citra, Cascade and Galaxy. A light drinking but full bodied hopped up pint after pint experience!

Song to Comus
Imperial Stout- 11.2% ABV


As anyone that opens a business knows, knowing when to celebrate your one-year anniversary is often a nebulous timing to lock in. Luckily for us, we also opened a pub! And that happened, well, a year ago late April/early May. Given the ample reason to party we decided an imperial stout would be the way to mark the occasion. Brewed with a plethora of dark malts and oats, fermented open with our house English strain, and aged with vanilla beans and cocoa nibs, this stout is at once rich but still drinkable, a true balance of new school intensity and old school sensibility. Very reminiscent of our brewery’s nature! Raise a glass in song to Comus!

Seek and Enjoy
3xDry Hopped Hazy Double IPA8% ABV


While we never swore off making double IPAs and other big beers, we certainly haven’t spent much time dabbling anywhere north of six and half percent. Seek and Enjoy more than makes up for the wait! Made with a malt bill of malted and flaked wheat, flaked oats and a touch of pils malt. We triple dry hopped this ultra-pale haze bomb with crazy amounts of Citra and Nelson and fermented it with our unique house English strain. This beer is a saturated ride for the senses!

Pash the Tinnie
Fairly Clear Pale Ale - 5.4% ABV

This all Australian hopped pale is our ode to some of our favorite hops from down under! Topaz, Vic Secret, and Galaxy are paired with a light malt base and fermented with our house Yorkshire ale yeast strain for a beer bright in tropical fruits and citrus, with a touch of dank!

Let Yacht Metal be your new favorite Summer soundtrack! Filled with tasty pilsner rifs, the rippin Amarillo solos, the brightest Mosaic falsetto and powerst of power ballads of Strata!  A mild and wild West Coast IPA like no other!

Summer WC IPA - 6% ABV

You know Mike right? Yakow Mike, NWS, Mike right?!? If not, you need to visit Oly and meet Mike! Cause we made this Summer crusher for him and for Oly and for all ya! Loads of Citra, Simcoe and Riwaka is our idea of a Summer quencher! Light in body thanks to the palest LINC Malt pils, plus a touch of flaked corn and fermented with lager yeast for the crispy!

Blow the Whistle
West Coast IPA - 6.8% ABV

It’s official, Blow the Whistle! Named for the original knitting mills steam-powered whistle atop our production building connected to our boiler, both of which we inherited in taking over part of the old Fish Tale facility - and therefore associated with more than 100-year tradition of blowing the whistle in Olympia. With this beer we celebrate our ability to bring back this tradition after its hiatus from Fish Tale shutting down their production a few years ago. We now proudly sound it at 5 ‘o’clock Monday through Friday to let our community know it’s beer time, no matter where they choose to partake! The beer: lightly hazy WC IPA with loads of Citra, Citra Cryo, and HBC 586 hops! Pale and soooo juicy!

Palmanova
Venetian Pils- 5% ABV

Our take on the now classic Italian Pils, made exclusively with malt grown off the Venetian coast in Eraclea, Italy. Step mashed to achieve a crisp dryness while maintaining minimal color. We ferment the beer cold and lager colder to achieve a natural clarity. Hopped with a combination of Tet, Ariana and H. Blanc, our take is at once traditional and modern reflecting the place and the people that originated this beer.

Corn Lager - 4.4% ABV

A beer made for our friend and damn near family member, Sam
fucking Jayne! Sam helped lay the path for the northwest’s other not-so-grunge 90’s indie music scene, showing the kids how to go out and do your thing and have fun doing it, through his raucous Love as Laughter! Though Sam is missed, he’s definitely not gone, and we made this beer to drink with him in some cross-eyed beautiful place.

Moon Bog
Experimental Hazy IPA - 5.8% ABV

We made Moon Bog to feature a couple of The Hop Quality Group’s experimental hops being grown at Crosby Hops in Oregon. HQG 1 and HQG 3 combine in this visually thick but drinkable lite beer bringing loads of peach and apricot aside tropical fruit punch. We are loving what HQG is doing and look forward to working with their future releases!

Retopia
Red IPA - 6.8% ABV

Retopia IPA springs from the ruined spaces and failed attempts left in the wake of the promise of IRA and hoppy ambers. Through the use of new imaginaries and social spaces we have created a post utopian IPA red in color, caramel in flavor and bursting with hops in the aroma! This is the Red IPA of the future realized now!

Hot Dog Day Afternoon
Modern Cream Ale- 5% ABV

The question was, what is the perfect beer to drink at a hot dog eating competition? After tossing around ideas we came to a modern take on the classic Cream Ale of old. A blend of pils, pale and flaked corn with just enough hops to legally call it a beer. Fermented warm and under pressure to keep the yeast clean and quick. Lagered, for like a week, then cold filtered for a crisp, clean and quenching drink! Perfect, we think, for soaking up all them dogs!

Praise the Ray
Hazy IPA - 6.0% ABV

Oh! This beer makes us wish we could describe the aroma of fruit better! But, best bet is to smell it for yourself. The perfect glowing yellow haze hopped with generous amounts of Azacca, Mosaic, and Moutere results in a glass full of dry, juicy, tropical scrumptiousness! Give yourself to the Ray.

Rainbow Dome
Juicy IPA - 5.8% ABV

Rainbow Dome is our celestial tribute to one of music’s more transcendent possibilities! Made with a like mind of pils, pale, corn and wheat yielding a bright yellow ephemeral body! A distinct array of space fused hops: Riwaka and Mosaic on the hot side and Nelson and, appropriately, Galaxy in the double dry hop led a feel and substance of Gamelan of the Love God meets Garden of Paradise. Forever Rainbow!

Mosaic
West Coast IPA - 6.2% ABV

We loved our fresh kilned all-Mosaic IPA so much we decided to take another crack at it! This time using 100% Roy Farms t-90 Pellets, Mainstem Pale malts, and a bunch of flaked grains. Fermented with our favorite Yorkshire yeast strain and double dry hopped with more Mosaic!

Lawn Darts
Summer Rice Lager - 4% ABV

Is it light, yup. Refreshing? Yeah. Crispy, duh! For this tasty little Summer quencher, we cereal mashed a couple hundred pounds of Calrose rice then step mashed that with the palest pils malt we could find for an ultra-pale and bright beer. Hopped exclusively with Roy Farms Adeena hops, fermented cold and lagered colder, it’s the beer we wish we could have been stealing from our lawn dart tossing uncles when we were kids!

Reunited… and it feels so good

Hazy IPA - 7.0% ABV

It really does feel good! We made this saturated juice bomb with our buds out of Aberdeen as a bit of a reunion beer. Loaded with Veteran blend hops from Yakima Chief, and a phat dry hop of juicy, fruit forward New Zealand Rakau. The beer smells as good as it looks - as good as it tastes!

Pine Street Bombers
Piney Pale Ale- 4.5% ABV

We made this piney, kinda clear, beer for our buddies at Thirty Fifth North skate shop in Seattle. The goal was a crusher hanging out and bombing the streets beer and we think we pretty much hit the spot! Brewed with pils, wheat and a touch of Vienna malt and hopped liberally with Centennial and Chinook, followed by more Centennial and Chinook and bigly amount of Eldorado in the dry hop! Piney but balanced with that touch of Eldo fruitiness.

Villarreal
Mexi-’Merican Lager - 4.0% ABV

Pat’s been making a version of this beer for the last couple decades. It represents the beer his mama’s side of the family - the Villarreals, Salazars, and Marquezes - would drink at any and all family get-togethers, from reunions to wakes, graduations to house parties. Like food, beverage is usually the last part of a culture to assimilate and with this beer, we’re happy to keep holding out with ya all! Made with a cereal mash of a third maze grits, third Vienna malt, and a third pils, and hopped with enough Saaz to make it drink right, lime or no! AND.. we do like lime in the glass, not the can around here!

Color Out of Space
Hazy IPA - 6.6% ABV

Stacked on LINC Buzz Pils malt, flaked wheat, oats, and barley.
Hopped to perfection with Mosaic and HBC586, and double dry hopped with Galaxy, Moutere, and Citra - ridiculously juicy, but not sweet! Still tastes like a beer!

Grazzma the Reliever
Spelt Pilsner - 4.6% ABV

No pils should be this silky smooth! We owe the mouth filling texture on this beer to our collab partners, LINC Malt, who provided us with the Moon Family Farm, Elwha River spelt Malt. That along with a goodly amount of Steffi Pils round out the texture of this Salmon Safe beer. We hopped it with a generous amount of Crosby Hops Crystal and Triumph for a relieving bitterness and citrus, pine and herbal qualities.

Zealandia
Hazy NZ IPA - 5.9% ABV

Made with LINC Malt Steffi Pils and flaked oats, flaked barley and corn, double dry-hopped with Hop Revolution Rikawa, Waimea and Mouteka, fermented with an English strain, so much fluff! Loads of tropical fruits like loquat, lychee and rock melon, something like that...

Brewed with a full pallet of amber, toasted and roasted malts, some random hops and damn near a bed full of whole oysters from our buddies at Hama Hama! Smooth, Bivalved, Desire.

Hechizo de Hambre
Mexican Dark Lager- 4.4% ABV


The undisputed champ of North American dark lagers, the ubiquitous Negra Modelo is our inspiration for Hechizo de Hambre! To many of us, this was our first dark beer and hands down the only dark lager we would have drank before the craft beer boom opened the floodgates of Czech dark this and Oktoberfest that. Brewed with Vienna malts and flaked corn with a tiny pinch of debittered black malt, fermented cold with our house Mexican lager strain, cold stored and naturally carbonated. This is our craft take on the classic and yes, drinking one will leave you hungry!

Dive
Traditional Pale Ale - 4.6% ABV

Dive Pale is our take on a clear pine and citrus forward pale ale but at a more crushable ABV. This round we blended a base of pils malt with a touch of Vienna and malted wheat, mashed high for body and fermented with our favorite Yorkshire ale strain. Hopped and dry hopped with Centennial and Vic Secret for a forward citrus, pine and pineapple this is the beer of our dive bar dreams!

Hollow Way
Pale Ale - 5.6% ABV

Hollow Way is inspired by the pale ales of the twenty teens, unarguably the era of the craft beer boom! Made with a small amount of Vienna malt and flaked wheat and hopped and dry hopped with a generous amount of Simcoe, Nelson Sauvin and Comet. Dry, clearish and clean, the way pales used to be! Findhorn Sanctuary
DDH Hazy IPA- 5.8% ABV

A further ascent into our exploration of proto new age music and its influence on our impression of tactile joy! Made with locally grown pilsner malt, flaked wheat and corn and hopped with Azacca, Blanc and Vic Secret hops keeping balance and clarity in mid this beer is bright, mildly hazy with saturated pine and pineapple and a touch of crisp green grape. A tribute to Steven Halpern and his sense of the world.

American Bittern
Best Bitter - 3.6% ABV

American Bittern is our Spring Bitter brewed with Linc Malt Baroness pale ale malt, several types of heirloom English crystal malts and hopped exclusively with English grown Fuggles. We fermented the beer open with our favorite Northern English Ale strain and naturally conditioned it to a soft carbonation. For the label we worked with our dear friend Larissa Podzaline’s depiction of the American Bittern, a wading bird in the Heron family!

Fluid Diet
Modern Pale - 5.2% ABV

For the last couple of years we have been making these lighter in color, lower in ABV and new school hopped pale ales but never had a good way to describe them. So, Modern Pale seemed to capture the idea. Made with a blend of Pils and pale malt, some flake grains and a base of Citra and Nelson hops, with a rotating third hop just to keep it changing. Fermented with our house Yorkshire ale strain, the beer retains a larger body than it’s mild ABV suggests.  So modern!

The Half Muntz
Hazy IPA - 6.3% ABV

Made with Mainstem Malt Cascade Pale, flaked oats, barley and corn grits and hopped with a little Eldorado and Idaho 7 and double dry hopped with a whole lotta Nelson Sauvin for so much citrus, pine and pineapple!

Circus Lupulus
Double Dry Hopped IPA - 5.9% ABV

Based on our ill-fated Simcoe/Idaho 7 Fresh Hop last Fall, we took the hop concept and softened it up a bit by Citra-fying it! Made with LINC Steffi Pils and Buzz Pale malts, corn grits, and flaked oats. Fermented cool - not cold - then double dry hopped with Roy Farms Citra and held cold until packaging. This one was a real trick to pull together!.

Remain in Dark
Dark Lager - 4.8% ABV

Clear beer, made with Linc Malt Francin Pils, Weyermann Carafa Special I and flaked corn, hopped lightly with H. Tradition and Tetninger Tet, fermented cold with German lager yeast, light but complex roast and malt character supported by a light touch of hops.

Work in Regress
West Coast / Juicy IPA - 6.4% ABV

Work in Regress is made with a blend of Linc Malt pils and pale and corn grits; it’s cereal mashed! Hopped with Simcoe and Enigma hops in the boil and double dry hopped with more Simcoe and Waimea, we kept the bittering low onthis one, like a tangerine on vacation in the tropics!

Old Ways
Altbier - 4.8% ABV

Pretty damn traditional Alt Style Beer. We made Old Ways in an honest to tradition method employing multi step temperature mashing and a blend of German malts. The beer was hopped with Tet and Northern Brewer in way that lets the malt take stage while still showcasing that noble bouquet. Finally, the beer was fermented cold, spunded for a natural carbonation and held cold for 4 weeks to achieve a bite spritzy drink!
